Ingredients
- 3 lbs. medium-size Washington red potatoes
- 1 oz. pancetta, diced
- 1/2 small to medium sized onion, peeled and finely chopped
- 3 oz. dried figs, stems removed and chopped (1/3 of 9oz. package)
- 1 1/2 oz. crumbled goat cheese (chevre), divided
- 1/3 cup apple cider vinegar
- 1 1/2 tablespoons sugar
- 3/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/3 cup vegetable oil
- 1 green onion, sliced thin
