Savory Potato Pizza Muffins

Ingredients

  • 3 cups all-purpose flour (1 lb 1.2 oz)
  • 1 cup dehydrated Potato Pearls (4.5 oz)
  • 4 tsp baking powder (0.6 oz)
  • 2 tsp Italian herb seasoning (0.2 oz)
  • 1 tsp salt (0.3 oz)
  • 1/2 tsp garlic powder
  • 4 eggs (7 oz)
  • 1 1/2 cups milk (12 oz)
  • 2/3 cup vegetable oil (5.5 oz)
  • 1 1/2 cups shredded light mozzarella cheese (6 oz), divided
  • 1 cup halved grape tomatoes (5.5 oz)
  • 1/2 cup chopped pepperoni (3 oz)
  • 1/3 cup diced red and green peppers (1.5 oz)

Directions

  1. Preheat oven to 400˚F. Line 24 muffin cups with paper liners. In large bowl, whisk together flour, Potato Pearls, baking powder, Italian herb seasoning, salt and garlic powder; set aside. In separate bowl, whisk together eggs, milk and oil; stir into flour mixture just until moistened.

  2. Fold in 1 cup (4 oz) mozzarella, grape tomatoes, pepperoni, and red and green peppers. Divide among prepared muffin cups. Top with remaining mozzarella.

  3. Bake in center of oven for 18 to 20 minutes or until toothpick inserted in center comes out clean. Let cool in pan on rack for 5 minutes. Remove muffins from pan; let cool completely. Serve 1 muffin per serving.
