Potato Quesadilla

Filled with fluffy mashed potatoes, savory ground beef and ooey-gooey cheese, these crispy-fried quesadillas are served with a rich tomato- guajillo salsa accented with peanuts.

Ingredients

  • 1 1/2 cups dehydrated potato flakes
  • 2 dried guajillo chile peppers
  • 1/2 cup tomato purée
  • 2 plum tomatoes, cored and quartered
  • 1/2 cup diced onion, divided
  • 1/4 cup toasted peanuts
  • 2 cloves garlic, minced and divided
  • 3 tbsp olive oil, divided
  • 3/4 tsp salt, divided
  • 3/4 tsp black pepper, divided
  • 10 oz lean ground beef
  • 5 oz shredded panela cheese or mozzarella (about 2 cups)
  • 8 flour tortillas (7 inches)
  • Canola oil, for frying

Notes

Substitute lean ground beef with ground pork, turkey or chicken.
