Ingredients

  • 2 lb Russet Potatoes cut into 1/2-inch thick wedges
  • 2 tbsp olive oil
  • 2 tsp Greek seasoning
  • 1/4 tsp each salt and pepper
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 8 pitted Kalamata olives, chopped
  • 1/2 cup prepared tzatziki sauce
  • 1/3 cup finely crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 2 tbsp finely chopped fresh parsley

Directions

  1. Preheat oven to 425°F. Toss together potatoes, olive oil, Greek seasoning, salt and pepper. Arrange in single layer on foil-lined baking sheet; bake for 30 to 35 minutes or until golden brown and tender.

  2. Divide fries among 4 plates. Top with lettuce, tomatoes and olives. Drizzle with tzatziki sauce. Sprinkle with feta, red onion and parsley.

    Tip: Add chopped, cooked chicken if desired.
