- 2 lb Russet Potatoes cut into 1/2-inch thick wedges
- 2 tbsp olive oil
- 2 tsp Greek seasoning
- 1/4 tsp each salt and pepper
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes
- 8 pitted Kalamata olives, chopped
- 1/2 cup prepared tzatziki sauce
- 1/3 cup finely crumbled feta cheese
- 1/4 cup finely chopped red onion
- 2 tbsp finely chopped fresh parsley
