Loaded BBQ Potatoes in Foil

Ingredients

  • 4 large white potatoes, thinly sliced, about 1/4-inch thick
  • 6 oz sliced mushrooms
  • 1 cup small broccoli florets
  • 4 slices bacon, cooked and chopped
  • 4 cloves garlic, minced
  • 1/2 tsp each salt and pepper
  • 4 tbsp butter, cut into small cubes
  • 1 cup shredded Cheddar cheese
  • 1/3 cup sour cream
  • 4 green onions, thinly sliced

Directions

  1. Arrange 4 large double-layered squares of foil on work surface. Add 1 sliced potato on top of each foil square. Top with sliced mushrooms, broccoli, bacon, garlic, salt and pepper. Dot with butter. Fold over each packet to enclose filling.

  2. Preheat grill to medium heat. Grill for 25 to 30 minutes or until potatoes are tender. Carefully open foil packets. Top with shredded cheese; grill for 3 to 5 minutes or until cheese is melted.

  3. Top with dollop of sour cream and sprinkle with green onions before serving.

    Tip: Alternatively, bake in 400˚F oven, directly on oven rack, for 30 minutes.
