- CILANTRO CUCUMBER DIPPING SAUCE:
- 1 cup oil
- 1 egg yolk
- 2 tablespoons lemon juice
- 3/4 teaspoon dry mustard
- 1/4 teaspoon salt
- 1 cup finely chopped cucumber
- 1/2 cup finely chopped cilantro
- BATTER:
- 2 cups all-purpose flour
- 1 tablespoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups beer
- 1 egg, separated
- 1 can (4 ounces) diced jalapeños, drained or 2 jalapeños, stemmed and finely chopped
