Guacamole and Shrimp Potato Bites

Ingredients

  • 4 Blue/Purple Potatoes
  • 1 tbsp olive oil
  • 1 tsp Tex-Mex seasoning
  • 1/2 cup prepared guacamole
  • 16 cooked peeled deveined large shrimp, tails removed
  • 16 thin slices radish
  • 16 fresh cilantro leaves

Directions

  1. Preheat oven to 400°F. Slice potatoes into sixteen 1/2-inch thick rounds; toss together potatoes, oil and Tex-Mex seasoning.

  2. Arrange in single layer on parchment paper–lined baking sheet. Bake, turning once, for 20 to 25 minutes or until golden brown and tender.Let cool completely.

  3. Top each potato round with heaping teaspoonful of guacamole and shrimp. Garnish with radish and cilantro.
    Tips:
    • Serve with lemon or lime slices if desired.
    • For a spicy bite, substitute thinly sliced jalapeño rings for radish slices.
