Green Chili Chicken Hash Brown Burritos
Ingredients
- 4 cups frozen hash brown potatoes
- 1 cup green chili salsa
- 1 1/3 cups shredded rotisserie chicken
- 1 can (19 oz) white beans, drained and rinsed
- 4 large tortillas, warmed
- 1 cup shredded Monterey Jack cheese
- 1 avocado, halved, pitted, peeled and sliced
- 1 cup shredded lettuce
Directions
Prepare hash brown potatoes according to package directions. Meanwhile, bring salsa to simmer in saucepan set over medium heat. Add chicken and beans; heat for 1 to 2 minutes or until warmed through.
Spoon chicken mixture down along center of each tortilla, leaving 1-inch border at top and bottom. Top with cheese, hash browns, avocado and lettuce.
Fold up bottom and top of tortilla over filling, then fold in sides and roll up tightly.
