Buffalo Potato Bites

Ingredients

  • 4 Washington red potatoes, scrubbed and each cut into 4 to 6 wedges (peels on)
  • 3 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup Buffalo sauce
  • 1/2 cup blue cheese dressing
  • 1/2 cup matchstick carrots
  • 1/2 cup thinly sliced celery
  • 1/3 cup thinly sliced green onions (optional)

Directions

  1. Preheat oven to 425°F. 

  2. In large bowl, toss potatoes with oil, salt, and pepper. Transfer to foil-lined baking sheet. 

  3. Bake for 35 to 40 minutes or until golden brown and tender.

  4. Arrange baked potato wedges on serving platter. Drizzle with Buffalo sauce and blue cheese dressing. Garnish with carrots, celery and, if using, green onions.

Notes

Substitute blue cheese dressing with ranch dressing if preferred.
