BLTT Sandwhich

Ingredients

  • 6 slices Texas toast bread
  • ¼ cup salted butter, melted
  • 4 slices thick - cut bacon (cut into half pieces)
  • 4 leaves curly red lettuce
  • 2 Tablespoons canola oil
  • 1 bag tater tots
  • 2 Tablespoons chopped fresh chives
  • 4 slices smoked mozzarella
  • Kosher salt to taste

Directions

  1. In a microwave-safe container, melt butter about 1 minute. Set aside. Toast all slices of bread and brush one side of each slice with melted butter. In a large skillet, over medium heat cook bacon about 4minutes per side, or until slightly brown and crisp. Remove to a paper-towel-lined plate.

  2. Wipe out skillet and add canola oil and 36 tater tots. Be careful with grease splatter and work in batches if your skillet does not fit all the tots. Fry over medium heat until golden and crisp, about 5-8 minutes, turning the tots as needed to brown all sides. Remove to a paper-towel-lined plate and season with salt.

  3. To assemble, place two pieces of bacon on each bottom slice of bread, followed by a leaf of lettuce. Next, layer the tater tots horizontally in three rows of three and sprinkle with chives. Top with a slice of smoked mozzarella and a second piece of bread. Repeat the first layer and top with the final piece of bread. Cut in half and serve.
