Vegan Funeral Potatoes

This vegan version of a classic Midwest casserole, popularly served as a side dish at funeral luncheons, is just as yummy as the original.

Ingredients

  • 3 large Washington State Russet potatoes, scrubbed (peels on)
  • 1 tsp vegetable oil
  • 1/4 cup vegan butter
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 1/2 tsp salt, divided
  • 1 tsp black pepper, divided
  • 1 cup vegan sour cream
  • 1/4 cup finely chopped fresh chives, divided
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp nutritional yeast (optional)
  • 3 cups shredded vegan Cheddar cheese, divided
  • 1/2 cup panko bread crumbs
  • 2 tbsp olive oil
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder

Notes

Substitute panko crumbs with crushed corn flakes if desired for a sweet and savory crunch.
