Microwaved Baked Potato

Who doesn't love baked potatoes?? This recipe is super quick and easy and perfect for when you are in a rush! You'll be shopping for russet potatoes-the big, brown, oblong ones-because they are the best for baking. Do one baked potato if it's just you and cook for a minute less. Remember to use potholders when you take the potato out of the microwave. And cut it open carefully-it will be hot and steamy.
