Herb Roasted Potatoes

Ingredients

  • 2 pounds new or baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter, melted Juice and zest of 1 lemon
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper
  • 1⁄2 teaspoon smoked paprika
  • 1 teaspoon soy sauce or tamari
  • 1⁄2 teaspoon onion powder
  • 1-2 teaspoons dried Basil
  • 1-2 teaspoons chopped fresh or dried Parsely

Directions

  1. Prep the Potatoes: Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it. In a large bowl, whisk together olive oil, melted butter, lemon juice, lemon zest, and soy sauce until smooth. Add the halved potatoes to the bowl and toss to coat evenly. Sprinkle with salt, black pepper, garlic powder, onion powder, and smoked paprika, basil, and parsley then toss again. Spread the potatoes in a single layer on the prepared baking sheet, cut side down for extra crispiness.
  2. Roast: Roast for 30-35 minutes, flipping halfway through, until golden brown and crispy on the edges.
  3. Serve it up!
