Sweet and Spicy Smashed Potatoes

Ingredients

  • 2 lb baby red or yellow potatoes
  • 1/4 cup butter, melted
  • 2 tbsp sriracha hot sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp soy sauce
  • 1/4 tsp each salt and pepper
  • 2 green onions, thinly sliced diagonally
  • 4 tsp toasted sesame seeds

Directions

  1. Preheat oven to 450˚F. in large pot of boiling salted water, cook potatoes for 10 to 12 minutes or until just cooked through; drain well. Let cool slightly.

  2. Meanwhile, stir together melted butter, sriracha, honey, sesame oil, garlic, soy sauce, salt and pepper.

  3. Arrange potatoes on large parchment paper–lined baking sheet. Using bottom of 1-cup measure or small saucepan, flatten potatoes to 1/2-inch thickness. Brush smashed potatoes with melted butter mixture.

  4. Bake, flipping halfway through, for 30 to 35 minutes or until potatoes are golden brown and crispy around edges. Sprinkle with green onions and sesame seeds.

    Tip: Substitute tamari sauce for soy sauce to make this a gluten-free recipe.
