Potato Tortilla with Vegetable Sauce

Ingredients

  • 6 medium Washington red potatoes
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 tablespoon chopped fresh thyme leaves
  • 1 to 2 cloves garlic, crushed
  • 1 1/2 teaspoons smoked paprika
  • 6 eggs
  • 4 egg whites
  • 1/2 cup shredded Manchego cheese
  • 2 cups baby spinach, rinsed and coarsely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil
