Potato Pizza with Herbs and Gruyere
Ingredients
- flour, for dusting
- 1 pound pizza dough, room temperature
- 2-3 yellow potatoes, sliced very thin
- 2 tablespoons olive oil
- 2 sprigs fresh thyme, leaves finely chopped more for garnish
- 1 sprig fresh rosemary, leaves finely chopped
- ½ teaspoon Kosher salt
- 4 ounces grated Gruyere
- grated Parmesan cheese
Directions
Pre-heat oven to 550 degrees Fahrenheit.
Dust a clean work surface with flour and roll pizza dough out to a 10–12 inch circle. Place on an oiled baking sheet or on a pizza peel if using a pizza stone.
Place sliced potatoes into a bowl along with olive oil, chopped herbs and salt and toss to combine.
Spread shredded Gruyere onto the pizza, leaving a border and top with sliced potatoes and a grating of Parmesan cheese.
Place pizza in oven and cook until crust is lightly golden brown, about 8-12 minutes.
Once done, remove from oven and garnish with fresh thyme. Cut into slices and serve.
