Mediterranean Mashed Potatoes

Ingredients

  • 3 ½ c. milk
  • 2 tbsp butter
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 3 cups dehydrated potato flakes
  • 1 tbsp olive oil
  • 1 cup drained canned diced tomatoes with Italian spices
  • 1 tsp minced garlic
  • 1/2 cup sliced pitted black olives
  • 1/2 cup toasted pine nuts
  • 1/4 cup finely chopped fresh basil
  • 1/4 cup crumbled feta cheese

Directions

  1. In medium saucepan set over medium-high heat, whisk together milk, butter, salt and pepper; bring to a boil. Remove from heat and gradually stir in potato flakes. Beat with electric handheld mixer on low until smooth and fluffy.

  2. In skillet set over medium-high heat, heat oil. Cook tomatoes and garlic, stirring occasionally, for 3 to 5 minutes or until heated through.

  3. Gently fold warm tomatoes mixture, olives, pine nuts, basil and feta into mashed potatoes. 

Notes

For a garlicky accent, cook 1 thinly sliced garlic clove in oil before adding with the tomatoes in Step 3, or add pinch garlic powder.
