Mediterranean Mashed Potatoes

Ingredients

  • 3 ½ c. milk
  • 2 T. butter
  • 1 t. salt
  • Dash of pepper
  • 3 c. dehydrated potato flakes
  • 1 c. drained Italian whole plum tomatoes, chopped
  • ½ c. roasted pine nuts
  • ½ c. sliced black olives
  • ¼ c. chopped fresh basil
  • ¼ c. Feta Cheese
  • 1 T. olive oil

Directions

  1. Bring milk, butter, salt and pepper to a boil. Remove from heat and gradually stir in potato flakes. Beat until smooth and fluffy. Sauté plum tomatoes in a tablespoon of olive oil. Gently fold in warm tomatoes, roasted pine nuts, olives and basil. Season to taste.
