Mediterranean Mashed Potatoes
Ingredients
- 3 ½ c. milk
- 2 tbsp butter
- 1 tsp salt
- 1/4 tsp black pepper
- 3 cups dehydrated potato flakes
- 1 tbsp olive oil
- 1 cup drained canned diced tomatoes with Italian spices
- 1 tsp minced garlic
- 1/2 cup sliced pitted black olives
- 1/2 cup toasted pine nuts
- 1/4 cup finely chopped fresh basil
- 1/4 cup crumbled feta cheese
Directions
In medium saucepan set over medium-high heat, whisk together milk, butter, salt and pepper; bring to a boil. Remove from heat and gradually stir in potato flakes. Beat with electric handheld mixer on low until smooth and fluffy.
In skillet set over medium-high heat, heat oil. Cook tomatoes and garlic, stirring occasionally, for 3 to 5 minutes or until heated through.
Gently fold warm tomatoes mixture, olives, pine nuts, basil and feta into mashed potatoes.
Notes
For a garlicky accent, cook 1 thinly sliced garlic clove in oil before adding with the tomatoes in Step 3, or add pinch garlic powder.
