Mashed Potato Bar

Ingredients

  • 8 lb yellow potatoes, peeled and cut into 1 1/2-inch chunks
  • 1 1/2 cups milk, warmed (12 oz)
  • 1/2 cup butter, at room temperature (4 oz)
  • 1 tsp each salt and pepper (0.3 oz salt, 0.1 oz pepper)
  • 1/4 tsp ground nutmeg
  • 2 lb cooked shredded chicken
  • 4 cups steamed broccoli (10 oz)
  • 4 cups halved cherry tomatoes (1 lb 8 oz)
  • 4 cups cooked corn kernels (1 lb 8 oz)
  • 4 cups shredded aged Cheddar cheese (1 lb)
  • 1 lb sautéed mushrooms
  • 1 lb bacon, diced and cooked crispy

Directions

  1. Mashed Potatoes: Place potatoes in large stockpot; pour in enough salted cold water to cover potatoes. Bring to boil and reduce heat to medium; cook for 20 to 25 minutes or until fork-tender. Drain well.

  2. Return empty pan to stovetop; set over medium-low heat. Add milk, butter, salt, pepper and nutmeg to pan. Add potatoes; mash with potato masher or electric mixer until fluffy and smooth. Keep warm for service. Makes 4 quarts.

  3. Toppings Bar: Meanwhile, arrange chicken, broccoli, tomatoes, corn, cheese, mushrooms and bacon in self-serve containers at self-serve bar.

  4. Serve portion of mashed potatoes (2/3 cup/7.3 oz per serving) in bowl. Instruct customer to add self-serve toppings from bar.
