Make-Ahead Herbed Potato Quiches

Ingredients

  • 1/2 cup Dehydrated Potato Flakes
  • 8 eggs
  • 2/3 cup milk
  • 2 tbsp finely chopped fresh parsley
  • 4 tsp finely chopped fresh chives
  • 1/2 tsp each dried oregano,garlic powder and salt
  • 1/4 tsp pepper and paprika
  • 3/4 cup shredded Cheddar cheese

Directions

  1. Preheat oven to 375°F. Whisk together eggs, milk, parsley, chives, oregano, garlic powder, salt, pepper and paprika until blended. Stir in potato flakes and cheese.

  2. Divide batter among 12 greased muffin cups. Bake for 18 to 20 minutes or until puffed and set. Let cool for 5 minutes; remove from pan. (To make ahead, let cool completely. Store in airtight container for up to 2 days or freeze for up to 1 month. Reheat before serving.)

    Tip: Substitute basil, tarragon or thyme for chives if desired.
