Easy Cheesy Potato Casserole

What you'll need to make this recipe:

 

Ingredients

  • 3 lbs Washington Russet Potatoes
  • 5 Green Onions, Diced
  • 8 oz Bacon
  • 1/2 Cup Sour Cream
  • 1 Can Cream of Chicken Soup
  • 8 oz Shredded Cheddar Cheese
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Directions

  1. Preheat oven to 350. Peel and cube potatoes. Boil them in a pot until tender (not completely cooked).

  2. Drain and set aside the potatoes. While the potatoes are cooking fry the bacon. When the bacon is almost done, drain grease and add green onions.

  3. Continue cooking until the onions are soft. In a mixing bowl, combine sour cream, cream of chicken, cheese and all seasonings.

  4. Add 3/4 of the bacon/onion mixture and stir well. Add potatoes to the mixture and gently stir until coated well. 

  5. Place mixture in a greased 9x9 baking dish. Sprinkle remaining bacon and onions on top. Bake for 30-40 minutes or until potatoes are fully cooked.
