Carne Asada Fries

Ingredients

  • 1 cup carne asada (use homemade or purchase from your local Mexican restaurant)
  • ½ cup guacamole (see below)
  • ½ cup cheese sauce (see below)
  • 2 teaspoons Mexican crema
  • 4 large Washington Russet potatoes
  • Tajin
  • Cheese Sauce Recipe Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup mozzarella
  • 1 cup extra sharp cheddar cheese
  • 1 teaspoon harissa
  • 1 teaspoon garlic salt
  • 1/2 teaspoon cayenne (optional)
  • 1/2 teaspoon pepper
  • Guacamole Recipe Ingredients:
  • 3 large avocados
  • 2 Roma tomatoes
  • 2 cloves minced garlic
  • 1 teaspoon harissa or chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • juice from 2 limes
  • cilantro

Directions

  1. Chop up carne asada and put aside. 

  2. Cheese sauce: in a medium saucepan, melt butter and add flour. Stir together for 30 seconds to 1minute on medium heat. Add in milk and seasonings. Cook until roux is well combined with the milk. Add in your cheeses, mix until well combined and set aside.

  3. Guacamole: mash avocados in large bowl. Add in chopped tomatoes and minced garlic, mix well. Add in seasonings and herbs, mix well then add lime juice. Mix well and set aside

  4. Peel two large potatoes and cut long ways like french fries. 

  5. Place your french fries in cold water for 15min, then rinse and dry.

  6. Place a large pot on the stove and heat oil. Bring the oil to temperature before adding in your french fries.

  7. Add french fries in the hot oil and cook for 5-7min. Remove from heat and place fries on a dry surface.

  8. Cool fries for 5 minutes and then add back to the oil and cook for another 10 minutes, or until golden brown

  9. Repeat steps until all your batches of fries are prepared.

  10. Assemble carne asada fries by layering with cheese sauce, carne asada, and guacamole.

  11. Top with Mexican crema and a dash of tajin, and enjoy.
