Bite-size Potato Pizzas


  • 2 Washington State Russet potatoes (8-10 oz. each), sliced 1/4-inch thick
  • 1 T. olive oil
  • Salt and pepper
  • YOUR favorite pizza topping: pepperoni, onion, sliced olives, browned sausage, etc.
  • 1 c. prepared pizza sauce
  • 1 c. shredded low-fat mozzarella cheese


  1. Place a single layer of potato slices in an oiled 13 x 9 x 2-inch microwave-safe pan. Brush with oil and season with salt and pepper. Cover with plastic wrap, vent one corner and microwave on HIGH for 12-15 minutes until potatoes are tender.

  2. Turn slices over and top with YOUR favorite topping, pizza sauce and cheese. Cover with wax paper and microwave on HIGH for 4-6 minutes until topping is heated and cheese melted.
