Apache Junction Mocktail with Festive Potato Garnish
Ingredients
- 2 ounces fresh grapefruit juice
- 3/4 ounce Simple Goodness Sisters Lemon Herb syrup
- 5 ounces club soda
- ice
- choose salty or sweet- rosemary salt or sugar rim
- rosemary potato chip and rosemary spear garnish
Directions
Fresh squeeze a grapefruit and strain out the seeds and pulp.
Add the grapefruit juice and syrup to a cocktail shaker over ice and shake for about 10 seconds.
Next rim an old fashioned glass with the herb salt, or sugar, by running a small piece of citrus along the rim of the glass. Place 1 tablespoon of rosemary salt, or sugar, on a shallow dish. Gently dip the rim of the glass in the rosemary salt, or sugar, turning as you go to cover the rim.
Add a big scoop of ice. Now strain the drink into the glass. Top with club soda.
Garnish by gently poking a small hole in the center of a rosemary salted potato chip carefully using a metal bbq skewer. Hold the rosemary sprig in one hand and with the other, strip off the bottom half of the leaves. Gently poke the rosemary stick through the hole you made in the potato chip. Place the garnish in the drink, taking care that the chip doesn't touch the liquid.
To make rosemary salt or sugar: Add a fresh, dry sprig of rosemary to a jar filled with 1 cup of coarse salt OR 1 cup of coarse sugar such as raw sugar (for a tan color) with a lid, store for 2 weeks to infuse the salt. Then fine chop 2 tablespoons of rosemary sprigs and add them to the salt and mix. Store dry.
